How to Make zesty Lime Cake Using Boxed Cake Mix
Well the world seems to be spinning out of control… and what do we do when that happens? Well depends who you are talking to I guess. If it’s me you are speaking with then WE BAKE! It’s a great way to keep the tiny humans occupied for a bit while simultaneously teaching them tons of fantastic life skills! And while I know baking seems like a daunting task for lots of people, using a simple box cake mix as the base makes it much easier! And since I have old grandma style convinced myself that citrus is the key to surviving this time period, a lime loaf cake with a lime glaze it is!! (Seriously ask any of my friends or family, I have been pushing citrus hard over here!!!)
THE MIX
For this cake I started with a Pillsbury Moist Supreme White Box Mix as the base. In general I find that this a pretty delicious box cake without a super overwhelming flavor. This really lends well to adding in additional flavors and ensuring that the tastes comes through.
ALTERATIONS
To start, rather than preparing the cake based on the instructions, I make a few small alterations to ensure a more flavorful and moist cake. These are only suggestions and not required but I have found them to be fairly tried and true methods to making your cake taste homemade or bakery bought!
Add 1 extra egg.
Substitute the oil for melted butter.
Substitute the water for milk.
ADDITIONS
Now there are tons of flavor additions that you can make to a box cake. But for this particular one I really wanted to have something with a subtle zesty vitamin-c packin’ kick, which is why I chose lime! And to be honest, we had a ton of limes to use up! I added the following to achieve the perfect blend:
Zest from 7 limes.
Juice from 7 limes.
That is seriously it!! Mix the additions in to the prepared batter and place into your favorite cake pans. For this cake I used two loaf pans. You can find similar pans here.
Another great tip, is when you are dusting your pans to prevent your cake from sticking, spray them with nonstick oil and then coat them with sugar. This will keep the cakes from sticking to the pan while also creating a delicious and slightly crunchy crust to the outside!
Finally bake at 350 degrees for 40 minutes!
And that's it! Your zesty lime cake will be moist, unexpectedly exciting and most importantly, delicious!
*Please note that I used two loaf pans for shorter cakes and more glaze but you could definitely use one pan and create a thicker cake!
Lime Glaze
I chose to glaze this cake rather than frost it because it is fast simple and delicious!
Combine 1 cup of powdered sugar with 6 tsp lime juice and mix. Then drizzle or spread over the top.
I chose decorate the cake with some lime slices, flowers and lime zest to round out this beautiful little cake!
Well, there you have it! A deliciously zesty lime cake that is perfect for any self or state imposed quarantine. And it all started with simple box of white cake mix!
