SPARKLING CITRUS PIE

There are few things that I like more in this world than a refreshing burst of citrus in dessert form! And this pie made with Sparkling ICE is the perfect way to do so. You won’t believe insanely it is to make this treat, and I swear people with think you spent HOURS on it. And the best part, not only will the kids love it, but you get to control the sugar content in it by using Sparkling ICE, win-win!

The first step is to make your graham cracker crust. (You can also buy one to really save on time, but if you have graham crackers and butter at home… it really is a snap!) Just take about 12 graham crackers and turn them to crumbs in a food processor. Add a 1/2 cup melted butter and combine. Then transfer to your pie plate. (I prefer glass, but any pie plate will do!) After you’ve pressed your crust into the bottom of your pie plate, pop it into the fridge to cool.

Next up is the lemon pudding filling. I used instant pudding. (If I were to do it again, I might take the extra time and use regular old pudding so that it sets up a bit firmer. Or I would add a packet of unflavored gelatin mix… But really this worked just fine as well and saves a ton of time!)

Just follow the instructions on the box and pour on top of the graham cracker crust. Then pop it back in the fridge for the cold keepin!

Next up, we have the Sparkling ICE gelatin top! I used their pink grapefruit flavor, but did you know there are 16 Sparkling ICE flavors to choose from?! And you can check them all out here! So really, you can pick any flavor your little heart desires, but for this recipe, I really think that pink grapefruit works the best! And since Sparkling ICE is zero sugar, zero calories and contains naturally sourced colors and flavors, I know I’m picking the best for my little ones!!

Anyways! Back to the crowning glory of our pie! Also, super easy!! Just take one 17 oz. bottle of Sparkling ICE and 3 packets of unflavored gelatin. Pour one cup of the Sparkling ICE into a cup and add the gelatin. Pour the remaining Sparkling ICE into a pot and bring to a boil on the stove. Then mix the two. Let the mixture cool down to room temperature then very carefully ladle the gelatin mixture on top of the pudding. (Now friends, when I say carefully, I promise you, I mean carefully! If you try to pour the Sparkling ICE mixture without a ladle or too quickly, it will cause indentations in the pudding layer and just make it all soupy.) Once you’ve transferred all the Sparkling ICE gelatin mixture, place it in the fridge to firm up!

And that’s it!!! You are done. Seriously, it is THAT easy!!

Of course, in my humble opinion, the decorating is the most fun part! And is also super easy and packs a huge visual punch!

I used grapefruits, oranges, clementines, lemon, and limes. With basil leaves for garnish! Just slice the fruits into rounds, with a few halves and quarter pieces. Then place on top of the pie and in whatever order your heart desires! A little trick I do is take out an empty pie plate and do a dry run and set out my pattern in there before placing on the pie itself! My other tip is to try and spread out the different sizes and colors as best you can to cause visual contrast, but truthfully, there really is no wrong way with this simple design! (And if you want, you can always just copy the one we did!)

SPARKLING CITRUS PIE RECIPE CARD

A delicious blend of citrus flavors and Sparkling ICE pink grapefruit keep the flavors of summer coming all year long!

CRUST

  • 1/2 Cup Melted Butter

  • 12 Graham Crackers

FILLING

  • 1 Package Instant Lemon Pudding

  • 1 Bottle Sparkling ICE Pink Grapefruit

  • 3 Packets Unflavored Gelatin

DECORATION

  • 1 Grapefruit

  • 2 Clementines

  • 1 Orange

  • 2 Lemons

  • 2 Limes

  • 10 Leaves Basil

CRUST

  1. Pulse graham crackers and butter in food processor. Press into bottom of your pie plate. Refrigerate

PIE FILLING

  1. Follow directions on lemon pudding. Pour over graham cracker crust. Place in refrigerator to set.

  2. Pour 1 cup of Sparkling ICE Pink Grapefruit into a separate cup. Add 3 packets of gelatin. Pour remaining Sparkling ICE Pink Grapefruit into pain and bring to a boil. Combine

  3. Let Sparkling ICE gelatin mixture cool to room temperature.

  4. Gently ladle gelatin mixture on top of pudding layer. Put back in refrigerator to set.

DECORATIONS

  1. Cut all citrus fruits into rounds. Arrange in various orders and place on top of set gelatin layer. Garnish with basil leaves. Enjoy!
